Biryani is an Indian dish, typically made with meat. This version is just as delicious and totally meat-free. It’s seasoned with cinnamon, cloves, ginger, and garlic for a fragrant and filling vegetarian meal. Hard-boiled eggs give the dish extra protein.
Hazelnut Quinoa-Stuffed Peppers
This delicious recipe will keep you full thanks to protein-packed quinoa. Shallots and hazelnuts are sautéed with cumin and garlic to create an aromatic filling for the bell peppers. With just 10 ingredients and less than half an hour of active cooking time (before popping the peppers into the oven for about 25 minutes more), this meat-free meal is a must-try.
Whether you bake it in advance and reheat it for breakfast or serve it with a side salad for a simple and filling dinner, a frittata is one of the easiest quick, vegetarian meals. Cherry tomatoes, olives, and crumbled feta give this version has lots of sweet and salty flavors.
