Go green for National Vegetarian Week – May 19th to 25th

With an array of ingredients best described as ‘nature’s bounty’, vegetarian food doesn’t have to be dull. In fact, these veggie recipes are likely to be some of the most exciting you’ve ever tasted

When anyone tells you to “eat your greens”, chances are you’re catapulted back to a childhood nightmare when you weren’t allowed to leave the table as long as a solitary soggy Brussels sprout remained on your plate.

Happily, these days we know much more about how to prepare and cook vegetables to get the best out of them. For those of us who aren’t au fait with fennel or comfortable with carrots, National Vegetarian Week is a great chance to try your hand at something new.

Las Iguanas is a high street restaurant chain that’s got an expansive menu from South America, but they’ve shared some great recipes here to show that you don’t need meat to make a meal.

Lucy Harwood at Las Iguanas says: “You wouldn’t expect the restaurant industry to be particularly welcoming of a veggie in their midst, but fortunately when I joined Las Iguanas many years ago the team saw it as an opportunity to tap into some insider knowledge.

“Over the past few years we have worked really hard to develop more and more tasty veggie and vegan dishes and I think they are far more exciting and varied than the choice I have when I eat out elsewhere.

“From Brazilian moqueca and fab fajitas to our awesome beet and bean burger, there’s something to appeal to meat-eaters too. For spring we’ve also introduced two mouthwatering new salads, including our delicious artichoke offering. We have separate menus available, label veggie wines, use only vegetarian cheese and have separate fryers and griddles in the kitchen, so when we say veggie we really mean it!”

With an eclectic menu that reflects the diverse mix of Spanish, Portuguese, African and native Latino influences that make up South American culture, the Las Iguanas menu features traditional dishes from across the continent, so what are you waiting for? Start vegging out.
